Tender courgette, crisp green beans, peppers and carrots simmered with coconut milk, pineapple and peach into a creamy, mildly sweet sauce with hints of ginger, lemongrass and chili. Served with fluffy white rice – a balanced, exotic and completely plant-based meal.
